Adapted from VegNews.com recipe bank, serves 4-6

  • 1 tbsp. coconut oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 garlic clove, minced
  • 1 tbsp chili powder
  • 2 sweet potatoes, peeled and cut into 1/2 inch chunks
  • 1 can crushed tomatoes
  • 1 1/2 cups black beans or kidney beans
  • 1 1/2 cups water
  • Salt to taste
  1. Heat oil in a large skillet over medium heat.  Ass the onion, pepper and garlic.  Cover and cook until softened, about 5 minutes.  Stir in the chili powder and cook for 30 seconds.
  2. Add the sweet potatoes and stir to cover with spices.
  3. Transfer the mixture to a crockpot.  Add tomatoes, beans and water.  Season with sea salt and cook on low 6-8 hours.
