1 large butternut squash: peeled, seeded and cut into 1 inch dice

1 medium sweet onion, diced

1/4 cup balsamic vinegar

1/8 cup extra virgin olive oil

1 tsp sea salt

1 tsp ground pepper

 

Heat oven to 400.

In a small bowl, whisk together vinegar, oil, salt and pepper.

Place squash in a 9x13 baking dish coated with cooking spray.  Pour vinegar mixture atop and toss gently to cover.

Bake uncovered for 35-45 minutes, turning to coat about half way through.

This is great served with a salad for a filling meal.
