1 pound whole wheat penne

3 roma tomatoes, 1 inch dice

1/2 yellow onion, diced

4 garlic cloves, finely minced

20 basil leaves, julienned

2 tbsp olive oil, divided

Sea salt

Red pepper flakes

 

Cook penne according to package directions.  Drain.

Heat a medium saute' pan and add 1 tbsp oil; coat pan and add onion and garlic, careful not to burn the garlic.  Stir until onion is translucent and garlic is fragrant.  Add tomatoes and basil and remove from heat.

Toss penne with remaining oil and tomato mixture.  Season with salt and red pepper flakes.

Serve with a large salad.
