Serves 4-6

 

2 cups water

1 1/4 cup lentils (I use sprouted green because they cook faster)

Taco seasoning (without preservaties or additives)

 

Corn or Whole Wheat tortillas

Guacamole

Lettuce

Tomatoes, diced

Onion

Cheese, if desired

 

Bring two cups of water to a boil, then add lentils and taco seasoning.  Stir and cover, reducing heat to medium low.  Allow to simmer for 20-25 minutes, stirring occasionally.

Build your taco with the lentils, guacamole, lettuce, tomatoes, onions and cheese.  Serve with salsa and a salad.
