Serves 4-6

 

1 package Taco Seasoning (without artificial ingredients or preservatives)

4 tilapia filets

1 tbsp. Extra Virgin Olive Oil

1/4 cup water

Oil for cooking

 

Corn or Whole Wheat tortillas

Guacamole

Lettuce, shredded

Tomato, diced

Cheese, if desired

 

Whisk taco seasoning, oil and water together in a bowl until lumps are gone.  Place filets in a large plastic sealable bag and pour taco seasoning mixture into the bag, careful to thoroughly coat the filets.  Leave on counter to marinate for an hour or more, turning to coat every 30 minutes.

Heat skillet on medium high for 3-5 minutes then add oil to coat the bottom of the pan.  Add filets and cook for 5 minutes then flip and cook until done, about 2-3 more minutes.  Remove from heat and use a fork to cut into bite sized pieces.

Warm tortillas on a separate skillet, then stuff with fish, cheese (if using), guacamole, lettuce and tomatoes.
