When it comes to cooking dinner, I want something that's nutritious and easy to prepare. Being in the kitchen is therapuetic for me and I do love to create more complicated meals that are somewhat 'gourmet' but I rarely have the time for that anymore.
The recipes that follow are pretty much staples in our house. They cycle through the month on a regular basis and are always crowd pleasers. Another benefit to most of these recipes is that they can be packaged up the next day for my children's lunches, making my life a little bit easier. You gotta love that!
