Tuna Salad (or chicken or salmon)

I love this salad because it makes enough for 2 meals and it's not loaded with commercial mayonnaise which oftentimes contains high fructose corn syrup and industrial, highly processed vegetable oils like Canola and Soybean.  


  • Can of tune (or chicken or salmon), drained
  • 1 avocado
  • Chopped red onion
  • Chopped celery
  • Hard boiled egg, diced
  • 1/3 cup chopped parsley or cilantro
  • 1/3 cup toasted almond slivers
  • 1 tsp. Herbamare (or salt)
  • Butter or Romain lettuce

Mix all ingredients together in a bowl, mashing avocado to form the dressing.  Place the mixture inside butter or romain lettuce to eat like a taco and serve with an apple or carrot and celery sticks. Share or save for lunch another day.  Will keep for 2-3 days in the fridge.
