Kale Salad with Hemp Seeds

serves 2-4

  • 1 bunch curly green kale
  • 1/4 cup hemp seeds
  • 1 lemon, seeded and juiced
  • 1 avocado, diced
  • 1/4 cup red onions, diced
  • salt to taste
  1. Wash, devein and tear kale in small pieces; place into a medium sized bowl. 
  2. Add lemon juice,  avocado, onions and salt; massage together for about 5 minutes, thoroughly coating each piece of kale and incorporating the ingredients all together.
  3. Top with hemp seeds and serve.
