Serves 2

  • 1 cup spinach, shredded
  • 1 cup romaine, shredded
  • 1/2 cup parsley, chopped
  • 1 carrot, shredded
  • 3 scallions, sliced
  • 1/3 cup cucumber, diced
  • 2 radishes, diced
  • Any other vegetables you prefer

Dressing

  • juice from a lemon
  • 1 tbsp. olive oil
  • 1 tsp. dijon mustard
  • 1 tsp. honey
  • Sea salt & pepper to taste
  1. Place greens and vegetables in a bowl.
  2. Place dressing ingredients in a jar and shake until well incorporated.
  3. Toss with vegetables and greens.  Store any left over dressing in the refrigerator for up to 5 days.
