Sweet Potato Chili

I love different variations of chili and this one is a top favorite.  The heartiness in this dish makes it a one pot meal and is even better the next day.  Enjoy!


  • 3 medium sweet potatoes, peeled and chopped
  • 2 cups broth (you can add more if you like a more soupy texture)
  • 1 lb ground grass-fed beef
  • 1 tbsp olive oil
  • 14 oz fire-roasted diced canned tomatoes, drained
  • 1 cup chopped white onion
  • 1 small head chopped cauliflower
  • 2 garlic cloves, minced
  • 2 chipotles in adobo, chopped
  • 1/4 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • sea salt to taste
  • 1/4 cup red onion - optional
  • Cilantro, chopped to garnish
  • Grated raw cheddar, optional
  • Sour cream, optional
  • Diced avocado, optional
  1. Add first 14 ingredients to the crockpot.  Stir well to blend flavors
  2. Cook on high for 4 hours then serve topped with cilantro, sour cream, raw cheddar and avocado.
