Beef Fajitas

Living in Texas, I love any type of Tex-Mex.  The smell of chili powder and cumin wafting through the air just makes me happy.  The flavors in this dish meld so well together and are great for leftovers in a salad or more fajitas!


2 lbs flank steak, sliced

2 red, yellow, orange or green bell peppers, sliced

1 sweet yellow onion, sliced

3 cloves garlic, minced

20 ounces your favorite salsa (make sure it's sugar-free)

1 tsp chili powder

1 tsp cumin

1 tsp oregano

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp sea salt

1/4 tsp red pepper flakes


Placed sliced beef in the crockpot

Mix spices together in a separate bowl, then pour over beef and stir to cover completely

Add sliced peppers, onion, garlic and salsa and cook on low for 6-8 hours or on high for 3-4 hours
