  • 2 cups cracked wheat or bulgur
  • 2 cups very hot water
  • 1 cucumber, finely chopped
  • 2 roma tomatoes, seeded and finely chopped
  • 1 bunch green onions, sliced thin
  • 2 cups fresh parsley, chopped
  • 1 garlic clove, minced

Dressing

  1. Soak the cracked wheat in hot water until the water is completely absorbed, about 30 minutes.
  2. Place prepared vegetables and cracked wheat in a large salad bowl and mix to combine.
  3. In a small mixing bowl, blend dressing ingredients and pour over vegetable mixture.  Mix until combined and serve chilled.
