  • 2 cups cooked garbanzo beans (or 15 oz. can drained)
  • 1 medium tomato, seeded and diced
  • 1/2 medium red onion, chopped
  • 2 medium garlic cloves, minced
  • 2 tbsp. parsley, chopped
  • 3-4 drops doTERRA Lemon Essential Oil
  • 1/4 cup extra virgin olive oil
  • Sea salt and pepper, to taste
  • 1/4 cup Feta cheese (optional)
  • 6 sliced kalamata olives
  1. Place beans, tomato, onion, garlic and parsley, Feta (if using) and olives in a medium bowl; stir to combine.
  2. Mix remaining ingredients together and toss with bean mixture.
  3. Serve atop greens or as a side dish.
