Roasted Garbanzo Bean Salad

serves 4-6

  • 2 can garbanzo beans, rinsed & drained
  • 1/4 cup coconut or olive oil
  • 1 tsp. paprika
  • 1/2 tsp salt
  • shallot, minced
  • 1 tsp. coconut or olive oil
  • 1/2 cup balsamic
  • 2 tbsp. olive oil
  • 2 tsp. dijon
  • mixed greens

In a saute' pan, heat oil on medium high then add garbanzo beans.  Cook beans until browned on all sides, about 10 minutes.  Remove beans from heat, drain on a paper towel then transfer to a medium bowl.  Toss with paprika and salt.

In a small saute' pan, heat 1 tsp. oil over medium heat then add shallots.  Saute' until cooked through.  Remove from heat and mix with balsamic, oil and dijon to make the dressing.

Toss the dressing with the greens and top with garbanzo beans.  Serve immediately.
