Cranberry Salsa

serves 10-12

  • 12 oz. package of fresh cranberries
  • 1 Granny Smith apple, peeled, cored and diced fine
  • 1 Anjou pear, peeled, cored and diced fine
  • 1 small red pepper, diced fine
  • 3 green onions, thinly sliced
  • 1/4 red onion, diced fine
  • 1/4 cup apple juice
  • 2/3 cup raw, unfiltered honey
  • 1/4 cup cilantro, minced
  • 1/2 tsp. cumin
  • Juice of 1/2 lime
  • 1/4 tsp. lime zest
  • Pinch of cayenne
  1. Rinse cranberries, discarding those that are soft or blemished.
  2. Place cranberries in a food processor fitted with the "S" blade and pulse until coursely chopped.
  3. Transfer to a mixing bowl and fold-in apple, pear, red pepper, green and red onions.
  4. In another bowl, mix thoroughly together the apple juice, honey, cilantro, lime, zest and cayenne.
  5. Combine cranberry mixture with apple juice mixture until incorporated well.  Chill.
  6. Serve with toasted tortilla wedges, tortilla chips or crackers.
