I love Christmas!  It's most definitely the 'most wonderful time of the year' to me and one of the ways I celebrate the family and friends I cherish is by hosting a Christmas luncheon for them.

For this year's menu, I wanted to use as little dairy, meat, eggs and gluten as possible.  My goal was to show my friends that they can cook healthfully and still have a tasty experience that pleases the palate but won't negatively rock their nutritional world.

Most of the recipes I used were modified with healthier ingredients.  For example, if a recipe called for sugar, I substituted with agave or sucanat; instead of butter, I used coconut oil; and, instead of milk, I substituted with almond milk or coconut milk.

Every one is different though, so please feel free to experiment as well.  If it doesn't work out the first time, there's always another chance to improve.  The important thing is to have fun in the kitchen and learn what stye of cooking most suits you.
